True Apple Lovers meet Aebleskivers

We absolutely love apples. Apples are the best; they are wonderful most any way you slice them, fresh, juiced, baked, sauced, and in every way imaginable. In Spain we harvest as many as we're able through the fall, like from our nun friends' orchard this year, and then I make us and them pies throughout the winter.
Nos encantan las manzanas. Las manzanas son lo mejor. son maravillosas de cualquier manera que usted las prepare, frescas, convertidas en jugo, al horno, cocidas y en todas las formas imaginables. En España cosechamos tantas como somos capaces por el otoño, como este año de los árboles de nuestras amigas monjas, y luego hacemos nosotros y ellas tartas durante el largo del invierno.
Other delicious possibilities besides pie include apple waffles and  Apple Muffins made with my variation of almond milk, grated coconut with pecans and nutmeg topping. After baking they are irresistible with pumpkin butter toted home in our suitcases from Trader Joe's. The last batch provided enough muffins to freeze and then warm for breakfast on these early frosty morning in Astorga.
Otras deliciosas posibilidades, además de tartas, incluyen gofres de manzana y madalenas de manzana hechas con mi variante de leche de almendras, cobertura de coco rallado,  nueces y nuez moscada. Después de horneadas son irresistibles con mermelada de calabaza traida a casa en nuestras maletas desde Trader Joe's. El último lote proporcionó suficientes magdalenas para congelar y luego se calientan para el desayuno en esas tempranas mañanas heladas de Astorga.

But, if we're going to talk apples, this is the moment to mention, or better to revel in the memory of the best apple dessert I have ever had in my life. It was while we were staying with Celeste and Robb in Fair Oaks, California, to be exact. I think Robb must have casually mentioned Celeste's Aebleskivers (Scandanavian Pancake Puffs) at some point and we immediately scrambled to find a morning that would work for all four. And we weren't disappointed!
Pero si vamos a hablar de manzanas, este es el momento para hacerlo, o mejor para deleitarse en la memoria del mejor postre de manzana que he tenido en mi vida. Fue cuando Enrique y yo nos quedamos con Celeste y Robb en Fair Oaks, California. Creo que Robb debe haber mencionado casualmente los Aebleskivers de Celeste (escandinavos Pancake Puffs) y nosotros revolvimos imediatemente para encontrar una mañana que funcionara para los cuatro. Vaya ilusión nos hizo y nos quedamos alucinados!

Celeste, glorying in her Danish heritage, skillfully poured an eggless, dairyless version  of the doughnut-like batter into a cast iron pan that I'd noticed before, but never seen anyone use.  As they puffed out of their round molds she skillfully turned each one so the two sides were equally browned and laughingly stating that her grandmother would turn hers over with a knitting needle.
Celeste haciendo gala de su herencia danesa vierte hábilmente una versión de masa sin huevo y sin lácteos en una sartén de hierro fundido que yo había visto antes, pero nunca había visto usar. A medida que se hincharon de sus moldes redondos ella hábilmente volvió cada un para que las dos partes se dorasen por igual y, riendo, decía que su abuela lo hacía con una aguja de tejer.

Although we tried our first aebleskivers in the fall I've read they are a classic holiday breakfast or dessert. May all the happy aebleskiver eaters at Robb and Celeste's home this Christmas enjoy!
Aunque probamos nuestros primeros aeblskivers durante el otoño, he leído que son el desayuno o postre típico durante las navidades. Que todos los degustadores de aebleskivers en la casa de Robb y Celeste esta Navidad disfruten!
